Chinese Dumpling Festival is approaching, for this year, it will falls on this coming Thursday which will be 25th June 2020.
I believed most of you might be wondering, how can i make Bak Zhang without rice, before i come out with this recipe, i also doubt it can be a huge success. But it really tasted like the REAL Bak Zhang but without rice. The ordinary Bak Zhang is about 500 Kcals to 600 Kcals each, while for my Bak Zhang, is only 184 Kcals, 8 Net Carbs each.
As i check online, Keto Bak Zhangs are selling SGD 8.00 each, while in Malaysia, is selling RM 15.00 - RM 18.00 each. I believe no one will share the recipe, else how can they sell with this price.
I cannot find any recipe online, hence i have come out with my own recipe. You may adjust the ingredients according to your own liking.
And just for all information, even diabetic patients can have this Bak Zhang, as it is grains free, gluten free and sugar free.

Now, we proceed to the ingredients needed.
Ingredients Needed:
- 1 tsp of Extra Virgin Olive Oil
- 1 duck egg yolk
- 226 gram of cauliflower (Frozen)
- 1 tbsp of psyllium husk
- 5 gram of shallots
- 5 gram of garlic
- 94 gram of pork belly
- 7 gram of dried mushroom
- 4 gram of dried scallops
- 5 gram of dried shrimp
Seasoning:
- Pink salt
- Pepper
- Liquid aminos
- 3 gram of red chilli (can omit)
Method: (Yield 2 Rice Dumplings)
- Prepare 4 Bak Zhang's leave, boiled with water then soak in cold water overnight.
- Fried caulirice with olive oil, pinch of salt, psyllium husk, some garlic and onions. Set aside.
- Then fried pork belly with some garlic and chilli padi. (Set aside) Note: You may want to use stew pork belly. As i only make 2 Bak Zhang, hence i didn't stew the pork belly.
- Fried dried mushroom. (Set aside)
- Now, you can assemble all the above ingredients in your Bak Zhang leave and wrap it like normal Bak Zhang.
- Steamed at PPC for 10 minutes.
Note: Other than psyllium husk and caulirice, all the ingredients can be replaced according to your own liking. You may want to add some chestnut or macadamia nuts.
